I would like to know if the CS uses either OAK or EMY to replenish the food supple for the dining car (if needed) on the NB or SB trips?

Oakland, I'm pretty sure. I do recall stopping in Oakland in 2001 and seeing the lounge cafe attendant loading supplies of beverages and stuff.

Yes, it's Oakland - Jack London Square station.
