Back in the 80's we took a trip from LAX to HLD via the Desert Wind and the CZ. If I remember correctly, our roomette was over $1000. I do remember that the train was always full. So people were willing to pay then, and I bet they'll pay now too (that is, if they bring back the higher quality food).

One other possibility that may work for you in the future would be the MBNA Guest Rewards credit card. I primarily use it for gasoline purchases and other travel related (including shorter or unexpectedly found bargain Amtrak travel) or otherwise reimbursed expenses. It softens the sting when I rationalize that each tank is getting me 45-50 points closer to a free trip.
I usually manage one free roomette trip per year now with my points.
(DISCLAIMER - MBNA is one of the credit barracudas.....I keep my balance at the point where I am able to pay it off each month.)
