I am planning quite a bit of rail travel over the next few years (assuming AMTRAK survives). What are the odds on being able to upgrade to standard bedroom once on board instead of purchasing in advance. I will appreciate any and all comments.

It's really a bet.

The trains I've used, post superliner, are the California Zephyr and the Grand Canyon.

The CZ I've done at the holidays and in the springtime. I've done it with three sleepers and with two.

When there were three sleepers, it seemed pretty easy to upgrade.

When I did it with two (and that included one holiday trip and the "in the school year" springtime trip), the car has been full.

I did Trains 3-4, the Grand Canyon (or as GBN described it, the old AT&SF 3-4 mail and express accommodation), aka the Southwest Chief, last Christmas.

The train was packed.

During summer season (Memorial Day through Labor Day) it is very doubtful you will be able to because things are packed! Same around any holidays. During other times the odds are much better. We took a train last winter and we were the ONLY ones in our sleeper car for most of the trip!!! I wish we had upgraded on bored then - we would have saved a fortune!
