The Three Rivers (Chicago-Akron-Pittsburgh-Philly-New York)
The Pennsylvanian (Pittsburgh-Philly-New York)
The Capitol Limited (Chicago-Cleveland-Pittsburgh-Cumberland-Harpers Ferry-Washington, D.C.)
The Cardinal (Chicago-Cincinatti-Washington-New York)

Hope this helps...

And add..
The Crescent (New York-Atlanta-Birmingham-New Orleans)

This route skirts the southern edge of the appalachians from roughly Toccoa, GA to Birmingham. Lots of curves, lots of kudzu, some nice grades. South of Birmingham it's pretty flat though.

Chalk up the Adirondack, Ehtan Allen, Vermonter, Empire Service, Lake Shore Limited, and Three Rivers too, since they all travel through the northern ranges of the Appalachian Chain.

Addmittedly, though, the Alleghenies, Adirondacks, and Catskills are not what one conjures up when thinking of "Appalichia."
