I think I would skip the Cordon Bleu Rubber entree. It may be hard to chew.

Richard, I'm not certain where the reference to a "Cordon Bleu" dish comes from, but I would hope for those who are still able to find "enjoyment" in riding the LD trains, Amtrak's vendor could find a way to have such "tasty".
That they apparently will not be assigning 680XX V-II's to 91-92, Star, means that the eleven of such unassigned for passenger use, will continue their "axle count" duties. There are several photos of these Diners out there showing them in "axle count" service. Wait for some "son of Mica" Congressman to get hold of them and start ranting about "waste" wherever a camera and mic happen to be.
Finally, I should note that there are reports that two of these Diners have been yanked to become "concept cars". I guess someone has decided to reconfigure such to better serve as "all purpose" F&B cars. Who knows what shape such will evolve to.

I just happened to see one of those pictures and I thought why not at least get some use out of these carsfor their intended purpose as dining cars on the San Joaqin? Or at the very least as first class lounges to enhance the ridership experience? Would one or two attendants cost THAT much?

I agree, Jerome. Why not restore a few for parlor cars on some of the LD trains. Could I suggest the Coast Starlight.

Being single level, the diners might not do well on the CS. But they might make good "Atlantic Parlour Cars" on the Lake Shore, Pennsylvanian, Adirondack,Cardinal etc. I could name more trains, but I want to leave SOME diners for the Silver and Crescent.

I just costed a Superliner Bedroom on the SW Chief, end to end.
At Amtrak’s price of 500 per person per night, I damn well deserve chef prepared farm to table foods, a Wine Spectator 90+ rated wine, and a top flight brandy after supper.
