I have seen model Amtrak cabooses, but I have never seen a real one. Does Amtrak really have cabooses, and if so, what do they use them for?

Yes, Amtrak has cabooses. I believe they are used mostly in the NEC for maintenance of way work. Photos of Amtrak cabooses at:

Most of them look like modern-day transfer cabooses ... in fact, what they really look like is a smooth size 26 foot container on a 40' flatcar frame. Note the Bettendorf style trucks. Don't see those often anymore.
