I am trying to find the French Toast Recipe from the Tock Island train the El Capitan that ran from Ca. to Illinois. Can anyone direct me to how to get it? Email me at cakesbyevelyn4u@yahoo.com please.

The Santa Fe ran the El Capitan, but I don't think it had anything to do with the Rock Island.

The El Capitan was a Santa Fe train and the French Toast was a specialty on many Santa Fe trains. Following is the recipe:

1 cup light cream (half & half)
4 eggs
3 slices bread cut 3/4 inch thick
1/4 teaspoon salt
Confectioners sugar
Vegetable oil

Cut firm homemade style bread into 3/4 inch
slices. Trim crusts and cut into triangles.
Combine beaten eggs , cream and salt. Drip bread triangles into mixture, allowing them to absorb as much custard as possible. Fry in about 1/2 inch of oil pre-heated to 325 degrees. When one side is golden brown turn and brown on second side. Turn only once. Place on a shallow baking pan and allow to puff in a 400 degree oven for three to five minutes. Drain on paper toweling to absorb excess fat. Sprinkle with confectioners sugar
and serve immediately. Serves three people with two triangle slices each. Add condiments and meat of your choosing.
